At our Competence Centre Starter Cultures & Fermented Products in Holdorf (Germany), we develop starter cultures for specific properties in the end product. Our starter cultures control specific processes such as lowering pH, developing colour and corresponding taste as wll as show protective functions.
Our objective: maximum product safety, excellent quality, and unique taste.
Protection against spontaneous microflora and potential harmful bacteria is the task of our BITEC® B-Range. In-house Challenge Tests with pathogen bacteria like Listeria Monocytogenes are our daily business and prove the safety of our food cultures with protective functions.
We are constantly looking for new fields of application and ways to make food tastier and safer with our cultures. Besides the traditional meat applications BITEC® , food cultures also have solutions for brine stabilization, fresh meat, natural curing, vegan products, vegetables and vegetable juice as well as fish, spreads and salads.
